Like lemons?  Like pie?  Like frozen things?  Like delicious desserts without needing to bake?  Assuming you aren’t crazy and you like all of these things, you will probably be a big fan of this super simple desert.  You can even use this pie to impress those people who will eventually become your in-laws, even though you are currently living in sin with their son.  It is that good.

The other thing that I learned when I first made this pie is that whipped cream tastes even better (who knew that was possible, right?) when made with icing sugar rather than granulated sugar.  Icing sugar whipped cream tastes like heaven.  I could eat it, and only it, by the spoonful, for lunch.  Sadly, the hubs doesn’t let me do that.  Apparently, it’s not “good for me” and you are supposed to eat vegetables for lunch.  Lame.

All dreaming aside, this pie is good.  You can get the recipe for a more labour intensive  pie (i.e., a pie in which you make the crust in a spring-form pan) right here.  If you are like me and take advantage of those pre-made pie crusts that the grocery store gods deliver, then just make about 1/2 of the insides and all of the whipped cream (you don’t need to halve your whipped cream just because you are halving your pie) and use your grocery store crust!

This pie uses lemon juice and lemon rind. I’ve got a little rind peeler thing-y majigy that I picked up at a garage sale for $0.50.  It’s probably worth about $0.02.  So  I use my cheese grater to get lemon rind.  I’m classy like that.

After that, it’s super simple. Combine the condensed milk with the lemon juice and set aside. Whisk the zest with the egg yolks in a medium bowl until pale, 30 to 60 seconds, and then whisk in the lemon juice-condensed milk mixture.

The pour it into your homemade or store-bought crust (seriously, no one is judging).  Sadly, when I served this pie we had guests for dinner (my famous sister-in-law, Debbie) and I forgot to take pictures of the finished product… Imagine a frozen version of this with whipped cream on top.  Tasty!
